Lactation cookies

Slightly different from the usual muffins or bentos of previous posts! It will be interesting to see what search words find this post! Apparently these are good to have as soon as the baby is born so I'm thinking of making and freezing some and then getting Andrew to chuck them in the oven once I start getting contractions. 

I haven't tried making these yet (two of the girls in my facebook due date group posted them) so can't be sure what they are like.

Lactation Cookies
250g butter
1 cup white sugar
1 cup brown sugar
4 Tbsp water
2 Tbsp ground linseed
2 large eggs
1 tsp vanilla essence
2 cups flour
1 tsp baking soda
1 tsp salt
2 Tbsp Brewer's yeast (available at Bin-Inn)
3 cups rolled oats
1 cup (or more) of choc chips/raisins/craisins/dried apricots/pumpkin seeds

Mix the water and linseed and let stand
Cream butter and sugars together, and then stir in eggs one at a time
Mix in the linseed/water mixture and vanilla to the butter mix - beat well
Add all other ingredients and stir until combined
Place teaspoons, or roll into balls and press slightly with a fork onto a baking tray (they will spread and rise a bit so leave a bit of space between)
Bake for 8-12 mins, at 180oC

Lactation Cookies #2
250g softened butter
3 tablespoons condensed milk
1/2 Cup Brown sugar
2 Cups Plain High Grade Flour
1 Cup Rolled Oats
4 heaped tablespoons of LSA (Linseed, sunflower & Almond meal)
2 heaped tablespoons of Brewers yeast.
250g dark choc chippies or drops, chopped nuts, seeds, coconut etc - to your taste.
Beat softened butter, condensed milk and brown sugar together, add all remaining ingredients. Mix together.
Makes approx 24, cook on 180 for approx 12 -15 minutes.
